In the ancient times the Cretan locals had to find ways to maintain the large quantities of meat they had. Using the incredible herbs and spices of the Cretan land they made the very unique "apaki", a gourmet, traditional Cretan delicacy made of smoked fat-free pork meat marinated in vinegar and salt, without preservatives. Marjoram or Sage added their flavor to the meat.
Greek Mountain Tea is known as Sideritis Syriaca and is made using the dried leaves and flowers of this plant. The beverage derived from this plant is also known as Shepherd's Tea because Greek shepherds would use the plants to make a brewed tea while tending their sheep in the hills.
