In the ancient times the Cretan locals had to find ways to maintain the large quantities of meat they had. Using the incredible herbs and spices of the Cretan land they made the very unique "apaki", a gourmet, traditional Cretan delicacy made of smoked fat-free pork meat marinated in vinegar and salt, without preservatives. Marjoram or Sage added their flavor to the meat.
