APAKI (traditional Cretan smoked meat)

In the ancient times the Cretan locals had to find ways to maintain the large quantities of meat they had. Using the incredible herbs and spices of the Cretan land they made the very unique "apaki", a gourmet, traditional Cretan delicacy made of smoked fat-free pork meat without preservatives marinated in vinegar and salt and extra native olive oil. Marjoram, Sage or Dictamus added their flavor to the meat.


Ingredients (4 people)
2 potatoes chopped in small pieces
½ cup of olive oil
2 chopped onions
Salt and pepper
250 gr. apaki cut in pieces
¼ cup of red wine
3 red peppers
3 chopped tomatoes
1 branch of Sage

Preparation

We put the potatoes in salted water for 30 min. After caramelizing the onions with the olive oil and the salt and pepper we add the apaki and sauté it from both sides. We fill in the wine and add the potatoes with the peppers and stir them for 3-4 minutes. After adding the tomatoes and the Sage we turn the heat down to the lowest for 40 minutes. It is not necessary to stir with the fork we just shake the pot from time to time.
